Makes about 2 cups
Plain oatmeal can be awfully boring, and you don’t always have the time to fix it up good. The solution? Make a batch of this “oatmeal enhancer” mix and store it in your fridge to make mornings a snap. I like to stir a heaping portion into a quarter- or a third-cup scoop of quick cooking oats, and add enough vanilla soy milk to cover it all. Pop it in the microwave for about 2 or 2 ½ minutes, stir, and add more milk if it’s too thick for you. This hearty, filling and marvelously healthful breakfast should stick with you throughout the morning hours.
Ingredients:
2 large apples, any variety, cored but not peeled, sliced and coarsely chopped
1 cup fresh or frozen blueberries
½ cup chopped walnuts
1 teaspoon ground cinnamon
½ teaspoon ground allspice, nutmeg or cardamom (whatever you prefer)
¼ cup packed brown sugar, or 4-5 packets artificial sweetener
Instructions:
Simply mix all ingredients in a bowl and stir well. Store covered in the fridge for up to 5 days. Add to uncooked oatmeal before cooking—or try it with other cooked or dry cereal. Again, experiment with the ingredients and proportions until you find the blend that is just right for you.
