Kim-Chee Soup with Tofu and Soba
Noodles
Serves 4
1 12-ounce package extra firm tofu, drained and pressed between
paper towels to express excess liquids
1 32-ounce container vegetarian broth
1 14-ounce jar Kim-Chee (found in the refrigerated section of groceries)
2 ounces soba noodles (or substitute other whole grain noodles)
sliced green onion for garnish
Cube tofu into small bite-sized chunks. Combine all ingredients in a slow cooker and cook on high
for 4 – 8 hours. Garnish just before serving.
