I love my slow cooker!   Time, especially in the morning, is precious.  I throw in all the ingredients for my soups at night, put the pot in the fridge, and set it in the warmer to cook all day while I'm at work.  If you prefer, you can simply make the recipes and simmer for an hour or so.

Kim-Chee Soup with Tofu and Soba Noodles

 

Serves 4

 

1 12-ounce package extra firm tofu, drained and pressed between paper towels to express excess liquids

1 32-ounce container vegetarian broth

1 14-ounce jar Kim-Chee (found in the refrigerated section of groceries)

2 ounces soba noodles (or substitute other whole grain noodles)

sliced green onion for garnish

 

Cube tofu into small bite-sized chunks.  Combine all ingredients in a slow cooker and cook on high for 4 – 8 hours.  Garnish just before serving.
